Cold extraction before fermentation for 8-10 hours at a controlled low temperature, separation of free run and press run musts, fermentation at a controlled temperature, maintenance of wine with the wine lees for about a month with periodical stirring, filtering and bottling.

Golden-green color; impressive fruity aromas of citrus, grapefruit and ripe tropical fruits; pleasant acidity, long and refreshing aftertaste.
As it is a wine rich in tannins, it fits very well with both meat and fish. Excellent escort for all traditional dishes (stuffed vegetables, moussaka), kefalonian meat pie, all kinds of seafood (especially lobster) and all fish (especially fried). Served at 8-10˚ C.
